Black tea (known as "red tea" or "hong cha" in China for the deep red color its infusions produce) is fully oxidized and roasted tea known its rich aroma and malty flavor profile. These teas can be great for simple digestion, as the roasting process creates essential oils good for stimulating the intestines. They also pair remarkably well with sugary and salty foods, as black teas cleanse sugar and salt from the palate remarkably well.
